Cooking instructions

Peel the potatoes, wash them, dry them

Start heating up, like 75 degrees, or 70 pct of max... When hot add all. Tip from chef: sweat the potatoes... Cover them.

Move them around quite a bit

Do until soft, about 30 min... Trick...stab with spatula!... Keep moving...

Six... Maybe 7 eggs, mix with salt, leave to side for now, trick could add a bit of milk and baking powder... Keep to the side. Tip chef.. Desperate egg whites then beat with fork until really thick

Now flip over after few minutes, 5 to 10 min, with plate

Flipped put back, cook more

Keep shaking and separating sides

5 min or so flip again, put back in

* Step 20

Two min or so, maybe flip again, that's it, done!
