Vegetable Biryani with Tempeh

#goldenapton23 #week21 #tempeh #playoff Tempeh is a rich source of high protein and today I combine it with the veggies in this biryani make the dish more healthy and nutritious

Cooking instructions

* Step 1

In a mixing bowl add ginger garlic paste,kashmiri red Chilli powder,salt,red Chilli powder, cumin powder. Then add curd and coriander leaves mix all very well.then add tempeh pieces and coated well.

* Step 2

Keep the marinated tempeh in fridge for 30 minutes. Meanwhile we chopped the veggies. Then take 4-5 cups of water in a big vessel add whole spices mentioned above for rice,add salt and oil. Bring it boil on high flame.

* Step 3

When the water started boiling add soaked rice and cook 80%.then strain it and rinse with cold water to stop cooking process.keep it aside.

Now take a kadhai,add oil when oil get heated add half onion slices and fry till they turn golden brown. Remove from oil and keep aside. Then add marinated tempeh pieces in the oil.and fry for 4-5 minutes til they fry little bit golden.

* Step 5

When they turn light brown transfer into a plate and in the same oil add whole spices,saute few seconds.

Add remaining onion slices cook till they turn light brown then add ginger garlic paste saute 30 seconds add chopped tomatoes and the remaining marination.

* Step 7

Add salt and red Chilli powder mix and cook till the tomatoes turn soft then add green peas and chopped carrot. Mix it,cover and cook on medium flame for 5-6 minutes

* Step 8

When the carrot and peas turn soft add fried tempeh and chopped capsicum. Add 1/4cup water,5hen cover it and cook for 5 minutes.

* Step 9

Now add biryani masala and cook on high flame for 2-3 minutes. Then add boiled rice and spread evenly.

* Step 10

Spread saffron milk over it,add coriander and mint leaves, slit green chillies and fried onion. Add kewra water and cover it. Cook on simmer for 8-10 minutes then turn off the flame. After 10 minutes open it and mix gently.

Now the tasty and healthy biryani is ready. Serve hot with raita.
