Chicken Balls in Sotanghon

Cooking instructions
* Step 1
PREPPING THE CHICKEN BALLS:
* Step 2
Scoop a generous helping of 1 Tbsp of the mixture and shape into balls (around 1 inch in diameter). Place formed chicken balls on a chopping board lined with wax paper. Set aside.
* Step 4
In a stockpot, bring 12 cups of water to a boil.
* Step 5
Add the prepared chicken balls.
* Step 6
Lower heat and simmer chicken balls for 10~12 minutes, or until almost fully cooked.
* Step 7
Add the chicken broth and carrots, followed by sotanghon.
* Step 8
Season with fish sauce (patis).
* Step 9
Let simmer around 2~3 minutes until sotanghon noodles are slightly tender (do not overcook).
* Step 10
Stir in chopped spring onion if desired (optional) and heat through. Serve hot.
* Step 11
To extend a serving, add Meiji Crackers, Realemon and Maggi Savor. Delicious!
