Caramel rice kheer
Rakhi is a lovely bond which is celebrated all over the country with lots of pomp and grandeur.
The festival cannot be complete without yummy sweets made at home and specially kheer.
So let's check out how to make this delicious caramel rice kheer to uplift our rakhi celebrations

Ingredient

Cooking instructions
* Step 1
Start by soaking raw rice in water.
Next go for boiling milk.
(I have used toned milk, you can use full fat milk). Add into milk, pounded cardamoms.
* Step 2
As milk boils, add into it pulsed raw rice and salt.
Let it cook in slow heat till the rice is very nicely cooked and softened.
Using a masher, mash and mix well.
* Step 3
Next into the kheer add milk powder and mix well. Next add sugar and continue cooking in slow heat till sugar dissolves and we get a perfect kheer consistency.
Adjust consistency as per your preference.
Remember kheer becomes thicker upon cooling so adjust accordingly.
* Step 4
Next in a separate pan, heat ghee. Fry kishmish, almonds and cashewnuts separately.
Keep few for garnishing and add rest into the kheer.
* Step 5
Now in the same ghee put granulated sugar. Let it be on slow heat. Be very cautious during sugar caramalization else, it may burn and your kheer may taste bitter.
As caramalization occurs immediately add the caramelized sugar into the kheer and mix.
Let the kheer be on slow heat for some time. Keep stirring.
You can find a beautiful colour..
The caramel also enhances the taste..
* Step 6
Caramel rice kheer is ready. But do not serve immediately. Transfer it into a bowl and let it cool down.
Then garnish it with some fried cashewnuts, almonds and kishmish.
Serve now!!
