Cajun Chicken Breasts with Orange Salad
Cooking instructions
* Step 1
Toss the chicken strips with the lime juice. Leave to sit in the lime juice for 1-2 hours in the fridge.
* Step 2
In a shallow bowl add the cajun seasoning, paprika, salt and flour and mix together well.
* Step 3
Remove the chicken from the lime juice and press each side into the flour until evenly coated. Place the chicken on a board/plate and spray with cooking spray on each side. Air-fry for 6-8 minutes at 200c, turning once, may need to be done in batches. Alternatively cook in the oven preheated at 220c for 20-25 minutes.
* Step 4
In the meantime, peel the oranges, discarding the white pith. Cut into segments, do it over a bowl so that it catches all the juice.
* Step 5
Toss the orange segments, orange juice, spinach, rocket leaves, oil, onion, salt and pepper together. Set aside until its time to serve.
* Step 6
Serve the chicken fillets with salad and polenta chips or wedges.
