Mommys potato kugel

My mother just makes the best potato kugel ever!! This week i had a go at it. She said her trick is putting the pan with oil in the over first and pepper :)

Ingredient

Cooking instructions

* Step 1

Prepare potatoes and onions by cutting them to fit nicely in the food processor

Put in Cuisinart, this recipe is worked in half. There's not enough room to put everything in at once so i put half of everything in and then the other half. Start with three potatoes and half an onion

Add one spoon salt

Add half a spoon of pepper

Add 1/2 cup oil

Add 3 eggs

Before blending ingredients, add 1 tbs oil in a baking pan. Warm up oven to 450° and stick pan in

While oil is heating up in the oven, process ingredients together. Oil should sizzle as you pour the first batch of potato mixture in the pan

Now add the rest of the ingredients to the blender: potatoes, onion, salt, pepper, oil and eggs. Process and pour in the pan

Bake at 450° for 1/2 hour. (Our batter made so much so i added some batter to a silicone cup cake sheet after spraying pam on it)

Then lower to 350° for another 1/2 hour

And enjoy! My niece loved the cupcakes and they came out of the pan like a charm
