Mommys potato kugel
My mother just makes the best potato kugel ever!! This week i had a go at it.
She said her trick is putting the pan with oil in the over first and pepper :)
Cooking instructions
* Step 1
Prepare potatoes and onions by cutting them to fit nicely in the food processor
* Step 2
Put in Cuisinart, this recipe is worked in half. There's not enough room to put everything in at once so i put half of everything in and then the other half.
Start with three potatoes and half an onion
* Step 4
Add half a spoon of pepper
* Step 7
Before blending ingredients, add 1 tbs oil in a baking pan. Warm up oven to 450° and stick pan in
* Step 8
While oil is heating up in the oven, process ingredients together.
Oil should sizzle as you pour the first batch of potato mixture in the pan
* Step 9
Now add the rest of the ingredients to the blender: potatoes, onion, salt, pepper, oil and eggs.
Process and pour in the pan
* Step 10
Bake at 450° for 1/2 hour. (Our batter made so much so i added some batter to a silicone cup cake sheet after spraying pam on it)
* Step 11
Then lower to 350° for another 1/2 hour
* Step 12
And enjoy!
My niece loved the cupcakes and they came out of the pan like a charm
