Non dairy gluten-free bread

I decided to make my own gluten free flour blend based on nutritional values and low carb since i seldom eat grains or carbs in general. In addition, I can easily use ingredients that suits my preferences than buying bread which may also have some additives, thus a healthier way of eating. The gluten free flour blend is 1kg of brown rice, 500g of quinoa, and 400g of millet; to be taken to the mill or you can blend at home with a blender . Store in an airtight bag when cooled and put in the fridge for use whenever needed.

Cooking instructions

* Step 1

Mix all the dry ingredients (except the walnut powder) in a large bowl.

* Step 2

Juice the lemon into the walnut powder, add the water to it and mix well. Pour the liquid mixture and the oil into the dry mixture and stir until they’re well incorporated.

* Step 3

Pour the batter into a greased baking pan and place in a preheated oven, bake at 200 degree Celsius for 40 minutes. Or you can insert a tooth pick or knife to see if it comes off clean. Allow to cool, then remove from pan and slice.
