The final part of my personal pumpkin challenge! I’ve used the whole pumpkin, roasted the skin and seeds, made scones at the weekend and now I made soup from the flesh. It’s surprised me how far one medium sized pumpkin can stretch, and more importantly the beautiful flavours that can be coaxed from each part. This soup is so delicious, the roasted pumpkin pairs beautifully with sweet corn.

Simply add all the ingredients to your pan, simmer for 10 minutes then blend and season to taste.
