Butter Bean & Cauliflower Mash
Mr N and I are trying to eat a more Mediterranean style diet and I’m trying to sneak more cauliflower into it (which he doesn’t like). I managed to get away with this one as the beans make the mash more potato like in texture and also water down the cauliflower flavour. I love it!

Cooking instructions
* Step 1
Boil the cauliflower until really tender) but not waterlogged and over cooked).
* Step 2
Drain well in a sieve, sit the sieve over the hot pan you just drained so that the steam helps dry the cauliflower.
* Step 3
Drain the beans and rinse in water. Add all of the ingredients to a food processor and blend thoroughly.
* Step 4
If you don’t have a food processor you can mash the mixture for a more rustic result.
