Cauliflower Veggie Rice
I’m loving my cauliflower rice but you could also just use normal rice.
Cooking instructions
* Step 1
Chip up the veggies (except the cauliflower) into fine dice.
* Step 2
Gently heat the oil and fry your veggies, garlic and soy together for 5 mins or so. Add the chilli powder and pepper and continue to fry for another few minutes.
* Step 3
Cook the cauliflower rice in the microwave then add this to your frying pan. Stir well and serve topped with fresh coriander.
