Skin On Roast Potatoes 🥔
Potato peel is often discarded but if you leave them on and roast them like this, they go extra crunchy. No waste #CookEveryPart
Cooking instructions
* Step 1
Wash the potatoes then cut into 6 chunks.
* Step 2
Par boil for 20 minutes then drain and allow them to sit in the colander above the hot pan to steam dry.
* Step 3
Put the potatoes on a hot baking tray with a good couple of tablespoons of oil. Then the potatoes over so they are coated in the oil, then roast for 40 mins turning occasionally.
* Step 4
After 40 mins, bring the potatoes out and gently squash them with a potato masher. Add them back to the oven and finish for a further 15 mins.
* Step 5
Season with salt before serving. I love these dipped in mayo 😍
