Quick Spicy Ratatouille 🌶
Before we went on holiday at half term I had some veg that was going to be wasted, so I put it in the freezer and thought I’d deal with it later! Anyway today our fresh supplies are low so I thought I’d dig it out and make something with it. I let the courgettes thaw out and they were a sorry floppy sight 🤣 But I diced them up and coated everything in chilli and paprika, and it was saved! I’m happy to play my very small part in preventing food waste #cookeverypart
Cooking instructions
* Step 1
Dice the courgettes up then mix with the tomatoes, chilli and seasonings.
* Step 2
Simmer on the hob with the lid off for 30 mins. Done!
