Chickpea Farinata (Pancake)

This is a thick robust pancake that is brilliant to use as a base instead of bread or pizza. I topped this one with salsa and veggie sausages. Very filling, healthy and allergen-free. You can mix up the seasonings and add parmesan to the mix too. #glutenfree #healthy #dairyfree #vegan

Ingredient

1 cup

water

1/4 tsp

salt

1 tbsp

olive oil

Cooking instructions

* Step 1

Whisk all the ingredients together in a bowl and leave to stand for at least an hour but ideally overnight.

Add a little oil to a large frying pan, pour in the mix and cook over a medium heat until you can see the edges forming up and setting.

Flip the pancake to brown and set on both sides. Top with whatever you like!
