Root Veg Thai Red Curry

This veggie curry is a great budget meal because it doesn’t contain any expensive meat or fish. You can get at least 4 meals usually from a packet of red curry paste, and fish sauce lasts for yonks in the fridge - so while it may cost you a little more upfront, this meal actually works out at about 65p a portion. #universitymeals #seasonsupply #glutenfree

Cooking instructions

Prepare the veg

Heat the oil in a large saucepan then add the curry paste and a tbsp of the coconut milk.

Allow the paste to cook for a few mins, then stir in the onions. Cook for 5 mins before stirring in the rest of the veg.

* Step 4

Stir in the coconut milk, sugar and fish sauce, then simmer partially covered for 50 mins or until the veg is tender. Add the tomatoes in about halfway through the cook.

* Step 5

Serve on its own, with rice and a sprinkling of fresh coriander if the budget will stretch.
