Pork Pepperoncini Stew

pork loin

4 teaspoons

minced garlic

3 teaspoons

oregano

Cooking instructions

* Step 1

In a large frying pan, heat oil over medium-high flame. Season pork with salt and pepper and brown pork on all sides, until golden (about 10 minutes total). Transfer pork to a plate and set aside.

Add onion and garlic to pan and cook, stirring often, until onion is softened, about 5 minutes, reducing heat if necessary to prevent burning. Season with salt and pepper. Add 1 cup of water, scraping up any browned bits with a wooden spoon. Return pork to pan along with chicken broth, pepperoncinis, and oregano. Bring liquid to a rapid simmer and cook until pork is tender, 45 to 50 minutes.

Season with salt and pepper to taste and add in 1 to 3 tablespoons of the pepperoncini brine. Serve with rice & enjoy!
