Beef Tapa
This cured beef is a popular breakfast meal in the Philippines usually served with garlic fried rice (sinangag) and eggs (itlog) fried sunny side up, forming the portmanteau tapsilog. The marinade is normally heavily laden with garlic, but I have as usual omitted that here. Add 3–5 cloves of minced garlic if you prefer. 🇵🇭🐄🥩🌄

Cooking instructions
* Step 1
Mix baking soda into beef, combine well. Let stand for 5 to 10 minutes.
* Step 2
Add citrus juice, mix well, let stand for another 5 to 10 minutes.
* Step 3
Add sugar and black pepper, mix well. Add soy sauce, cover, and let marinate for at least 8 hours.
* Step 4
On medium heat, heat oil in a skillet and fry the marinated tapa until done, about 5 to 10 minutes. Serve with fried rice, sunny side up eggs, and a spiced vinegar dip.
