#goldenapron2 #orissa #2ndWeek Chena poda is a classic odissi sweet recipe which is made specially during any festival. Chena means Paneer or cottage cheese and poda means burnt. So chena poda means burnt paneer or cottage cheese. It is so simple to make with very few ingredients and the speciality of this sweet is it's caramel flavour along with little burnt chena or paneer.

powder Sugar

2 teaspoon

Semolina

1/2 teaspoon

Cardamom powder

1 teaspoon

Ghee

1/2 teaspoon

Orange zest

1 teaspoon

brown Sugar

Cooking instructions

* Step 1

Heat milk in a heavy bottomed pan.

When milk starts boiling, remove the flame, add 3 tablespoons of white vinegar and give a gentle mix.

Keep aside for 10 to 15 minutes to curdle the milk completely.

When the chena separates from whey drain it to a muslin cloth and then rinse the chena nicely with cold water so that smell and taste of vinegar goes off completely.

Squeeze the excess water and tie the cloth with chena for 10 minutes so that excess water from chena removes.

After 10 minutes, transfer the chena to a container. The chena should be moist and soft. Note that don't tie the chena for longer time which will make them very dry. And we don't need that.

Mash with your palm for few minutes and then add 2 teaspoon of semolina, 1/2 cup of powder sugar and cardamom powder.

Mix well so that everything combines well.

Heat 1 teaspoon of ghee in a pan and fry cashew and raisins to golden brown.

Remove them to a cutting board, slice them to small pieces and add to the chena mixture.Also add 1/2 teaspoon (approx) of orange zest if you like.

Mix everyone well to form a soft and moist dough.

Take 4 or 5 ramekin bowls or any other baking dish and grease with some ghee.

Sprinkle some brown sugar to each bowl.

Preheat oven at 200 degree C for 10 minutes.

Add 1/2 teaspoon of baking powder to the chena dough and give a final mix.

Fill 2/3 of each bowl with the chena mixture.

Grease some aluminium foil with ghee and cover each bowl.

Bake them for about 30 minutes.

After 30 minutes removes the cover carefully and bake 10 more minutes or until a toothpick inserted comes out clean.

Delicious chena poda or burnt cottage cheese is ready now.

When they cool down scrap the sides with a knife and invert each bowl carefully to a serving dish. Enjoy the tasty Orissi sweet with your family and friends.

Note that it is necessary to caramalise the sugar and the chena or paneer should be little burnt to get the authentic taste of chena poda.
