Radish & Drumstick Sambar

Cooking instructions
* Step 1
Wash and soak toor dal for 1 hour. In a pan add enough water and cook the dal until it’s done. Alternatively pressure cook the dal. Once Dal is cooked add in chopped raddish and let it cook until raddish is tender. Soak tamarind in hot water for 10 minutes and extract the juice.
* Step 2
In another pan heat oil and add in mustard, let it splutter. Add in chopped onion, curry leaves and sauté until translucent. Add in cleaned and chopped drumstick and sauté for 2 minutes.
* Step 3
Add in sambar powder and sauté on low flame for a minute. Add in chopped tomato and mix.
* Step 4
Add in extracted tamarind water, half cup water and let it boil for 2-3 minutes.
* Step 5
Add turmeric powder to boiling dal and mix. Add in prepared mixture to the cooked dal and let it simmer for 8-10 minutes. Add grated coconut, chopped coriander leaves and let it boil for 2 minutes and switch off the flame.
* Step 6
Raddish & Drumstick Sambar is ready to be served with steamed rice along with Thondekai Kabuli Chana Palya.
