Baba ghanouj using microwave

I told mum about the trick of cooking aubergine in the microwave and she suggested we give it a go and make baba ghanouj 😊
Ingredient

10 minutes
Cooking instructions
* Step 1
Poke with a knife and wrap the aubergine with cling film. Place in the microwave and cook for 5-6 minutes
* Step 2
The aubergine will be very soft and too hot!! Unwrap and set aside until it cools down a bit. Take the flesh out with a spoon
* Step 3
Crush the garlic with salt. Add the aubergine to the mortar (or a bigger bowl) with the garlic and smash using the pestle. (Didn’t take photos for this step. Sorry!)
* Step 4
Add the tahini (and yogurt if you want) and lemon juice. Combine, move to a dish and add extra virgin olive oil on top.
