Red Amaranth (Leaf/ Saag) with Rice

This is dedicated to one of my close aunty who is a breast cancer survivor!
I love this combo !
I don't need to have anything else to have steam rice when the stir fry Amaranth Greens is there.
(But I have to make side dishes for other family members because they can't alone have it so there was Aloo Bharta, Dal and Karela Bhaja ...all Veg Lunch for the day )
Amaranth leaf is available in three types of color. I love this red variety vitamin and mineral rich leaves and moreover from childhood I am fascinated by the way the rice changes to pink once you mix it with rice to have but I add a little portion of the green variety too if I get.
Sometimes I love it with Shrimp/ Prawn
The Amaranth seeds is considered to be a superfood just like quinoa.

Cooking instructions
* Step 1
Separate the leaves from the hard stalks. Wash it thoroughly and drain the water out. Mince the onion. Heat oil in a kadai, break and add the whole dry chilli and when it changes color add the minced garlic and saute till it becomes nutty brown.
* Step 2
Now add the Amaranth Greens, if you want you can chop it and add. Add salt as per taste. To expedite the wilting process, you can cover and cook for sometime till it gets wilted. Then open the lid and stir fry for few more minutes and you are done, within 10 minutes your Amaranth Greens stir fry is ready. Serve hot with hot steamed rice.
* Step 3
Boil water and when it starts boiling, wash and add the rice and cook till it softens up, it may take about 20 minutes, then throw the startch water away. I love to cook my steam rice this way. Cover and let it stand for sometimes before you serve. Serve hot !
