Quinoa Upma

#toc3 #Cookpadindia I love Upma, it's my favourite breakfast. Here, I have cooked it with the supergrain/ superfood Quinoa instead of Semolina/ Suji/Rava. I have used mixed three kinds of Quinoas here, you can make with anyone. It's a great start of the day, this Quinoa Upma you can have it as brunch or lunch too. Research says, It's better than Brown rice in terms of health benefits packed with protein, fibres and various vitamins and minerals. It's totally Gluten-free so good for people on Gluten-free diet and those on weight loss diets or just like this for a change in your everyday cooking to make it nutritious and healthy!

Cooking instructions

* Step 1

How to cook soft, fluffy Quinoa- Soak the Quinoa for about 15 minutes and then wash it thoroughly in running water in a Seive. Add water in it and cover till it comes to boil. Then open and cook the quinoa till all the water is absorbed by it. Put off the flame and put on the lid again and let it stand for 5 minutes. After 5 minutes, fluff up the cooked quinoa, in this way you will get a soft, fluffy, non- mushy, separate grain cooked quinoa. Collect & Prepare all ingredients.

Once quinoa is cooked. Heat oil in a pan/ kadai, if using raw, fry the peanut first and take it out and keep it aside. In the same oil, add whole Dry Chilli & mustard seeds, once it crackles add both the dals and saute for a minute add onion and saute for a minute, add the cubed potato and the carrot and saute for about two minutes then add the chopped beans and mix well. Add salt too and curry leaves, cover and cook for about 5 minutes. Let it cook in its own moisture on medium low flame.

* Step 3

Once the vegetables are soft but not mushy (if needed then only add a bit of water to avoid vegetables from burning and cooking it nicely, I didn't add any) add the peanuts and the cooked quinoa, mix well and cook for another 2-3 minutes. Remove from Flame and cover with a lid and let it stand for about 5 minutes and then serve hot / warm.
