Chamre Bhaat (Rice Dish with Broken Rice Grains)

#toc3 #cookpadindia Chaamre Bhaat is rice preperation generally prepared with Broken Rice grains ( Kanika ). It's Savoury with a hint of sweetness, you can cook in ghee or mustard oil, I prefer ghee. It's generally eaten for breakfast but you can have it as lunch too. It's a great way to make use of the broken rice grains apart from making Kholey ( rice porridge), Khichuri/ Khichadi, making rice flour, Sel Roti etc. About 2-3 decades ago, lots of broken rice used to be there in everyday eating regular rice ( I am not talking about Long Grain Basmati Rice).So our grandma & mom used to separate it by sifting it in a bamboo seperator called Nanglo ( which was made of bamboo woven in round shape) because they used to say that if we cook rice with whole grain rice and broken rice grain mixed, the rice would not cook evenly at the same time and it spoils the texture of the rice as a whole. Some of the broken rice, my grandma and mom used to give to the sparrows and other birds early in the morning and some they used to cook different dishes. Here I have used broken Long Grain Basmati Rice so I have confidently added water in the ratio of 2:1 ( Water: Rice ) as we would cook Pulav/ Pulao, Biryani etc. But my mom/ grandma used to cook with everyday eating regular rice so even if they soaked the rice they used to add little water at a time like 1/2 cup or 1/4 cup till the rice got well cooked {of course covered with a lid in thick Iron or Hindalium Kadai ( wok) }.

Cooking instructions

* Step 1

Wash and soak the broken rice for at least 30 minutes. Chop onion. Heat ghee or Veg oil (I love it with ghee, if you have health issue cook with oil) in a kadai or pot (my mom used to make it in Kadai I do it in a thick bottom flat pot). Add in the cinnamon, Cardamom, cloves and bay leaf. Once it crackles add in the onion, saute for few minutes until it becomes pinkish.

Then add in the soaked rice and mix it and saute for a minute, then add turmeric powder, sugar salt and mix again, add in water. Cover and cook for 10 minutes and the put off the flame and let it rest for about 20 mins. Open and fluff up the rice and serve while still hot with Eggs, any Cuuryg or Chutney or simply have it with Tea !
