Healthy Besan Egg Chilla

Cooking instructions

* Step 1

In a bowl mix the besan and dry spices then add the chopped onion, Chilli and cilantro and give it a quick mix with a whisk.

* Step 2

One by one add the egg and mix it, make sure there are no lumps (check your whisk too). The batter should not be too thick or runny but of pourable consistency.

* Step 3

Heat a non-stick pan most preferably because in that case we need negligible amount of oil. With a tissue paper dipped in oil (it should not be drenching in oil) just spread it on the pan. Don't overheat the pan. Now with the help of a ladle pour the batter in the hot pan as big as you want. I made two medium sized and one big size chillas as very little batter was left so I poured all the batter and made a big one. Adjust the flame and preferably keep the flame/ hotplate low.

* Step 4

Cover and cook. When one side solidifies flip the Chilla to the other side. Flip the chillas and cook till your Chilla is cooked and gets the desired color (browning). Each Chilla will take about 2-3 minutes only. Serve hot with chutney or with Raita, like I had with Garlic Chutney Raita.

* Step 5

For Raita : In a blender, blend the curd, salt and dry garlic chutney. Once done add the chops onion and mint. Mix it and serve with Chilla or Parathas etc.
