One of my favourite...used to be my quick Tiffin in a nearby restaurant in college days. I recreated @uma malpani ji's recipe.
As I has cherry tomatoes, I used that instead of chopping the big tomato.

10 -15 minutes
Cooking instructions
* Step 1
Heat a Dosa making tawa. Mix the onion, cilantro, chilli and salt and keep aside. Don't mix the cherry tomato slices now (If you are using chopped tomatoes mix it along with onion).
* Step 2
When the tawa is heated enough pour the dosa batter but keep it thick. Immediately spread the veggies on top of it while still wet. Drizzle / apply oil, cover and cook. Once it sets flip it upside down,
* Step 3
Cover and cook, once again flip it, cook it until the Uttapam is well cooked inside too. Enjoy with Chutney!
