Pesto pasta with Cashew

Generally pesto pasta is made with spaghetti pasta but I make with Penne or Fusilli as its readily available and when I don't have the pine nuts ( the costliest nut in the world ) I use cashew nuts and customize it as per my taste buds. Thank God Fresh Italian Basil is readily available nowadays.

Cooking instructions
* Step 1
Prepare all the ingredients and boil the pasta as per instruction, keep it al dente, reserve the boiled pasta water for cooking purpose.Cut the chicken breast into strips. Make a paste with the ingredients listed for Pesto. With 2 tbsps of pesto marinate the chicken for half an hour at least.
* Step 2
Heat little butter and oil together in a pan, to give an extra flavour..saute the Chopped garlic and little Chopped basil, saute the tomatoes also along with garlic and basil and take it out & add it while doing platting. After taking out the tomatoes add the marinated chicken breast strips and cooked for sometimes- add the pasta water when required.
* Step 4
Once the chicken gets cooked add the pesto and then add the Boiled pasta n adjust salt...don't cook too much now. Put the flame off n plate it & garnish with sauteed tomato, fresh basil n more cheese. Bon Appetite!!!
