Sunny- Side-Up Egg Dosa

I love this Sunny-Side-Up Egg Dosa. First time I had in one (Tamil ) aunty's place almost a decade ago...I knew only Masala Dosa and Plain Dosa, I was surprised when she served me Dosa with sunny-Side-Up egg...she didn't add anything...it was simply egg with a sprinkle of chutney powder. From that day onwards I started making myself at home as my husband had become a die hard fan of it ...as per him it was a complete healthy breakfast, we sometimes have for in between small hunger too. But I add some onion , tomato etc and sometimes grated cheese too. As nice Dosa batter is easily available here so I use store bought only to make my Sunny-side-up Egg Dosa. Sometimes I add two eggs per Dosa

Cooking instructions
* Step 1
Prepare all the ingredients- chop the veggies. Bring the batter to room temperature if it was in the fridge.
* Step 2
Mix all the onion, tomatoes etc.chopped with salt as per taste.... when you are about to start making.
* Step 3
Spread the Dosa batter on a pan, drizzle ghee or butter whatever you prefer.
* Step 4
Add the egg, I prefer poached / sunny side up so keep it intact then add the onion, tomato, chilli coriander mixture and sprinkle the chutney powder and cover with the lid and cook for a minute or less in low flame till the egg is done, the yolk should be runny so don't overcook it. If you want more crispy Dosa open the lid and cook for sometime. Serve it hot with coconut chutney or any of you favourite chutney.
