Ice cream Sandwich

#bisc I had made this Ice cream Sandwich as a treat for my son during lockdown with Marie biscuit, homemade mango ice-cream & Crushed pistachio as he used to enjoy a lot when abroad. Vanilla ice cream with chocolate cookies is an awesome combo too. You can make it with any flavour ice-cream which goes well with any Biscuits and garnish with crushed almonds, peanuts, chocolate sprinkles etc. Since it's winter now, I have stopped having ice creams but I wanted to share the idea so that you can have an idea for next summer

Cooking instructions

* Step 1

Soften the ice cream a bit by keeping at room temperature for 5-10 minutes. So that it will be easy to spread on the biscuit. Scoop out the ice-cream and spread it on a biscuit and keep another biscuit on top to form a sandwich. Do for all the biscuits in the same way. Freeze it again for an hour or two to firm up a bit.

* Step 2

Keep the crushed Pistachio or chocolate or colored sprinkles ready on a plate or tray for garnishing.Once the ice cream in the ice cream sandwich firms up.....take it out and roll it on the garnishing and serve it. Bon Appetit!!!

Note: Do it in a cool environment or an AC room during summer not in the warm kitchen.
