Brinjal rice

Brinjal rice is a very tasty rice recipe. It's full of flavours and easy to prepare also. So wait not...try soon! This recipe works for your lunch box and is good to finish your leftover rice too.. #brinjal #rice #vegetables #Mar #W1

Ingredient

Food ration :

2-3 persons

Cooking time :

20 minutes
1 tbsp

oil

3/4 tsp

cumin seeds

as per requirement

Salt to taste

Cooking instructions

* Step 1

Heat oil in a frying pan. Splutter cumin seeds. Saute onion till brownish.

* Step 2

Add salt, turmeric powder, red chilli powder and curry powder (or vangi bhaat masala). Mix well.

* Step 3

Add in chopped tomato. Saute till cooked and mushy. Next add in chopped brinjal. Mix well.

* Step 4

Cook brinjals till softened. Stir fry for some time. Now add in cooked rice into the fried brinjal.

Mix carefully. Brinjal rice is ready!!

Serve hot hot with boondi raita...
