This carrot poriyal is simple yet delectable. It's colourful and nutritious too.

Cooking instructions
* Step 1
Steam the small chopped carrots (add little salt), till it's cooked yet crunchy. Keep it aside.
* Step 2
Heat oil. Splutter mustard seeds, cumin seeds. Add dry red chillies, curry leaves, gota urad dal and pounded garlic.
As garlic becomes little brownish, add the steamed carrots
* Step 3
Add salt, turmeric powder and red chilli powder. Stir fry for some time.
* Step 4
Now add in freshly grated coconut. Mix well. Finally add a dash of garam masala. Mix well.
it's ready to serve!
