Cooking instructions
* Step 1
Soak almonds overnight. Peel the almonds. Grind it into a smooth paste with fresh cream.
* Step 2
Next cut the paneer into cubes. Add salt as required. Mix.
* Step 3
Next add saffron (kesar) soaked in milk into the paneer and mix. Keep it rested.
* Step 4
Next place a kadhai. Sprinkle little water. Add whole spices. Add chopped onion, tomato, ginger and few cloves of garlic. As onions turn brownish, add little water. Be careful while browning the onion, else if you overdo it, the gravy will taste bitter.
* Step 5
Let it cool down, then grind it into a smooth paste.
* Step 6
Next place a kadhai with oil for heating. Add the masala paste. Cook it in slow flame.
* Step 7
As it is little cooked, add salt and garam masala. Let it continue cooking.
* Step 8
Next add slit green chillies as per your taste.
Next add the almond and cream paste. Mix well. Keep the flame slow.
* Step 9
As all the flavours combine well and almonds also loose it's rawness, add the saffron milk soaked paneer into the prepared gravy.Mix carefully.
* Step 10
Let it be on slow flame. Add water. Cook till your required consistency.
Switch the flame off. Sprinkle Kasuri methi.
It's ready....
* Step 11
Serve PANEER KESARI with rice/ roti/ paratha/ kulcha.
It has minimum spices yet the gravy is rich and delicious...
