Rice kheer with Cardamom flavour
Rice kheer is a common dessert in Odisha... this recipe is my mom in laws recipe... specially made during pujas..so sharing with you all..
It has an awesome aroma of cardamoms, bay leaf and the flavours of saffron. It is sugar free..so has the goodness and sweetness of jaggery.
The dry fruits, cashewnuts and almonds give that perfect crunch.

Cooking instructions
* Step 1
Put milk, bay leaf, cardamoms (3 pounded and one whole) on slow flame. As it boils, add cleaned raw rice and salt into it. Let it cook in slow flame. As it cooks gradually the milk will become thick and rice grains will plump up. Scrapes sides. Add saffron then and mix.
* Step 2
Since rice is nicely cooked, now you can add any sweetner. I have used jaggery powder. Add jaggery powder and mix.
Then add ghee and mix. Adding ghee gives a nice flavour, shine and adds to the aroma.
Next add into it dry roasted, coarsely chopped, cashews and almonds. Mix all well.
* Step 3
Rice kheer with an awesome aroma of cardamoms is ready to serve...
Some people like it hot, some like cold. I like kheer when it's cold. So I'll wait till the rice kheer cools down and all flavours get nicely combined with one another.
