Alu besan curry in frame with beetroot poori

Cooking instructions
* Step 1
In a pressure cooker heat oil.Splutter mustard seeds and cumin seeds,add urad dal and chana dal.
* Step 2
Next add curry leaves and dust some hing. Add grated ginger and mix all well.
* Step 3
Now add chopped onion and saute till translucent. Next add fresh green chillies and tomato.
* Step 4
Add salt and turmeric and mix all well.
* Step 5
Next add the diced potatoes and some chopped coriander leaves.Mix them all.
* Step 6
Let it be on slow flame for sometime.Mix intermittently.
Now add water into the sauteed potato mixture.Mix all ingredients.
* Step 7
Let this come to a little boil.
Add coriander powder,cumin powder.If you want to add curry powder and garam masala,add now.
But I wanted to keep it subtle so didn't add.

Now add besan and mix well.Let it be on slow flame for sometime.
* Step 9
When all flavours combine.Put the pressure cooker lid and cook for 3-4 whistles.
* Step 10
As cooker cools, releases pressure, open and mash some potatoes little bit. Besan and mashed potatoes make the gravy nice and thick.
* Step 11
Give a gentle mix. If required add water and bring it to a single boil.Superb aroma.
switch off.
It's ready to serve.

Bring it on to a serving bowl, garnish with coriander leaves and serve with poori/ paratha/ chapatti/ phulka
