Refreshing Cucumber Sesame Noodles
I used to make these light and delicious cucumber noodles regularly when I was eating a low carb diet. They pair particularly well with my hot peanut & chilli noodles, (the meat sauce minus the egg noodles, shown in main photo), that you can also find on my recipes. They are perfect if you just fancy something light and refreshing.

Cooking instructions
* Step 1
Take the spiralized cucumber and lay it out upon a large chopping board or tray, then take sheets of kitchen towel and lay it over the cucumber noodles and press down with both hands to release as much moisture as possible. Do this with new sheets until they aren't soaking wet.
* Step 2
Season the noodles with salt and place in a bowl. Pour over the sesame oil and seeds.
* Step 3
Toss the noodles around to coat them in the sesame mix. Serve up with your choice of dish and enjoy! :)
