Stir-fried Bok Choy with mackerel in tomato sauce
Mackerel in tomato sauce is one of my favorite meat for cooking stir-fried vegetable recipe. In this recipe, Bok Choy or Chinese cabbage, is my vegetable of choice. Bok Choy, one of cruciferous vegetable, is known for its strong aroma, but after cooking it’ll become tender and taste really good.

Cooking instructions
* Step 1
Prepare all ingredients. Separate mackerel from tomato sauce.
* Step 2
In a saucepan, heat vegetable oil with high heat. Stir-fry garlic and chili for 10-15 sec until they become fragrant.
* Step 3
Add Bok choy. Stir-fry for 2-3 min until they start to wither. Season with oyster sauce, soy sauce and the remaining tomato sauce. Mix well. Avoid overcooking to preserve the vitamins.
* Step 4
Add mackerel and mix gently.
* Step 5
Transfer to a serving platter. Serve with warm steamed rice.
