Grilled salmon with stir-fried mushroom with Thai basil
Stir-fried Thai basil or “Pad Kaprao” in Thai words is one of the most popular street food in Thailand. Thai basil has unique scent which can highly enhance your appetite and goes well with many kinds of ingredients such as minced/sliced pork, beef, chicken, fish, shrimp or calamari. For vegan, you can use tofu or mushroom for substitution.

* Step 1
Season skin side salmon with salt and pepper
* Step 2
For the grilled salmon: bring out the non-stick saucepan. Heat the vegetable oil with high heat. Cook the skin side salmon for 4-6 min or until the salmon flesh become light in color, then flip to the other side. Add butter. Cook for another 1-2 min. Transfer to a plate. Do not clean the saucepan.
* Step 3
For the side dish: prepare all the ingredients. Heat the saucepan and leftover oil with high heat. Sauté the mushroom until tender and brown. Add Thai chilli and garlic cloves. Stir-fry for 1 min. Season with oyster sauce and fish sauce. Finally, add Thai basil. Mix well for only 10-15 sec and turn off the heat. Transfer to a plate.

You can serve with rice, fried egg or scrambled egg.
