Panash Matar Masala (Odia Style Curry/lunch)

Raw Jackfruit is known as'Panash' in Odisha. Raw jackfruit is being cooked with dry yellow peas(matar), potato and onion masala paste. This delicious Odia special curry is a signature dish of my mother. I have inherited this recipe from her.

Cooking instructions
* Step 1
Clean up and wash the Jackfruit pieces. Add a pinch of turmeric powder, red chilli powder and salt. Mix well and fry with 1 Tbsp oil on low flame till aromatic and soft, 10 minutes.
* Step 2
Heat the 2 Tbsp mustard oil, splutter ponch phutan add fry the chopped onions till aromatic and translucent.
* Step 3
Now mix the grated ginger garlic and chopped tomatoes along with salt and turmeric powder. Mix well and saute till tomatoes are soft.
* Step 4
Then add the masala powders from the ingredients section and cook on low flame with some water. Add boiled yellow peas and boiled potatoes chunks.
* Step 5
Add the required water for gravy, mix well, cover the cooking pot and cook on low heat for 3-5 minutes. Garnish the Panash Matar Curry with coriander leaves and serve with steamed rice and roti. Thanks.
