Cooking instructions

* Step 1

Firstly, heat up a frying pan over the medium flame: Add in the Suji/Semolina & dry roast it until light golden brown & then, add in all the aforementioned ingredients (except the mango purée) and mix everything well together until nicely combined and well blended

* Step 2

Once the mixture thickens & kind of binds up together... gently, starts releasing the oil & the mixture leaves the pan/pot easily- Turn off the flame and allow it to sit on the hot oven itself while we’re preparing the Aamras

* Step 3

Heat up pot/saucepan: Add in the blended mango purée and mix some sugar to it & gently keep stirring continuously so as to avoid sticking to the bottom of the pan- This might take about 7-8 mins time for the purée to thicken & reduce in its original quantity

* Step 4

Add in the reserved ghee to it & cook it for another 5-6 mins time until it forms kinda one string consistency- turn off the flame and let it cool down a bit before mixing it to the already prepared Besan pan

* Step 8

Now, once both the mixtures have been cooled down a bit- Now, mix it with the prepared Besan mixtures & again turning on the flame to the low heat, we need to mix the entire mixture together until nicely combined and well blended & the flavours are incorporated in the same

* Step 9

Now, once the mixture starts leaving the pan & forms into a smooth & soft & an uniform dough like stuff- Now, is the good time to put off the flame & let it cool down for a while & then dividing it into the lemon sized balls in between the palms & rolling it into a round smooth LADDO shape structures, repeat the same with all the portions (for me it’s 18 balls/Laddus)

* Step 10

Garnish it with the halved pistachios/almonds, etc. Can also use the edible silver papers on it (I’ve used the Vegan/plant-based ones) but that’s completely optional though &..... ENJOY
