Now, whether it’s one of the most easiest yet quite stylish and delectable ways to present the eggplants well, I leave onto you guys to decide on...
Actually, I’m not quite fond of the Eggplants but surely LOVE the Eggs
Hence, nothing could be more interestingly motivating for me to merge both & ENJOY
Ingredient
Food ration :
2-3 people

30 mins (prep to dish)
Cooking instructions
* Step 1
In a large mixing bowl: Crack the given no. of eggs & add into it- rest all other ingredients mentioned above (except cut the eggplants)
* Step 2
In a large heavy bottomed frying pan: Place the shapely cut eggplants & then, pour in the eggs, veggies & spices mixture to that shaped cavities, to form the shapely egg omelettes inside it
* Step 3
Keep the flame low-medium, all along...in order to cook both the items together- the omelettes inside the eggplants & not to burn them
* Step 4
Once the eggs mixture sets into the eggplant cavities- carefully flip it onto its other side & allow it to cook evenly from both the sides- Each side will require about 2-3 mins time approx.
* Step 5
This is an unique way of consuming both the things together- even, when I item’s not liked, if consumed alone 😌
* Step 6
Once done: Take it out onto the kitchen towel & allow any excess oil to soak into it & then transfer it to the serving plate & Enjoy with any Dip/s, of your choice or have it with hot steamed rice & dal...😋
