Cream of Pumpkin Soup

Ingredient

3-4 Cloves

Garlic

2 Cups

Cooking instructions

* Step 1

Wash & Slice the Pumpkin accordingly...

Heat up a large frying pan/wok over the medium flame: Add in the EVOO & then, the sliced onions

Sauté lightly until it reduces a bit in its volume...Add in the garlic cloves as well & sauté

Once done: Add into it the pumpkin slices, add in the salt & black peppers & the red chilli flakes

Sauté for about 2-3 mins time, until it changes its colour slightly

Then, add in the water, wait until it comes to a boil & then reduce the flame to the medium-low & allow it to cook for 15 mins time, with its cover on

Allow it to cool down completely before blending into a smooth paste... Before serving warm it up a bit- if it’s very thick, can dilute it by adding about 2 tbsps of warm water

Garnish with freshly cracked black peppers & fresh cream... ENJOY, this soulful healthy dish in any wintry day/night or as & when you feel like 👍🏻
