Kombdi Vade

Cooking instructions
* Step 1
Add turmeric, salt, malvani masala, ginger garlic chilli paste, garam masala to the chicken pieces and mix it nicely and keep it closed for 10-15 min.
* Step 2
Heat oil in a pan and add 1 piece of cut onion (long cuts) and fry it till it’s golden brown.
* Step 3
Add some grated coconut and dry coconut and sauté the mixture
* Step 4
Put the above mixture in a mixer and add some water to it and grind it to form a coconut paste
* Step 5
Heat oil in another bigger pan. Add some hing. Add 2 pieces of cut onion and fry the onion. Add Bay leaf (or curry leaf is ok as well). Add some ginger garlic chilli paste.
* Step 6
Add some malvani masala and then add the marinated chicken pieces
* Step 7
Cover the pan with a lid containing some water and allow the chicken to cook for 15 min
* Step 8
After 15 min, check if the chicken is cooked (optionally add the lid water to the mixture as well). Add the coconut paste (created in step 2 to 4) to the chicken gravy to give it a thickness.
* Step 10
Add some hot water to the mixture and mix it to create the dough (start with a spoon since we are using hot water)
* Step 11
Press the dough balls to create flat round shaped wade’s
* Step 12
Heat oil in a pan once it’s hot enough, add the Vada to fry it
* Step 13
Boil an egg and add to the chicken gravy before serving (optional)
