Italian meringue

Tastes like marshmallow fluff. This is ideal with desserts like lemon meringue. 🍋

Ingredient

180 ml

water

Cooking instructions

* Step 1

Add the white sugar and water in a pot. Bring to a boil. Do not mix.

* Step 2

Whisk the egg whites and cream of tarter with a hand blender or electrical mixer until it forms a soft peak.

* Step 3

The sugar should continue boiling until it reaches 117°C.

* Step 4

While slowly mixing the soft peaked egg white slowly pour the sugar syrup into the mixture. Continue mixing until it cools down to room temperature. You should be able to touch the bowl.
