Brown Chili with Little Ears

It turned cold here in Florida. Soup and chili time. You have white chili, and red chili, here is my brown chili yes it has beans and pasta. The pasta is Orecchiette which translates to little ears. Some people have heartburn to tomatoes in chili and to counteract that people sometimes put sugar with tomatoes. We don't like sweet chili so I have came up with this. I used to put in mushrooms then I found out some people don't like the texture of cooked mushrooms so I use mushroom broth. Just plain cooking for the ones you love!!!

Cooking instructions

* Step 1

In a pot brown all the meats, dice the onion and add to the meat. Sauté till the onion is translucent. Slice the squash.

* Step 2

Add the beans, hominy, corn and spices. Add in half the demi glace. Stir allow to simmer 15 minutes and add the mushroom broth. Be careful with the demi glace this will make the chili thick and rich.

* Step 3

When it simmers add the Orecchiette. Boil, peel, and chop, the eggs.

* Step 4

Add the rest of the demi glace. Stir in the Orecchiette. Add the chopped eggs. Stir well!!

* Step 5

When the pasta has cooked 13 minutes at a simmer taste the pasta to see doneness. If its where you like it serve. I hope you enjoy!!! I served with pork fat bread, you can see my recipe.
