* Step 1

Dry roast the corn meal until a nice aroma arises. Remove from flame and keep aside. Boil water and add salt and oil. Slowly add the hot water as needed to the roasted maize flour. Using a ladle, knead well and combine into a smooth dough. Cover and let it rest for 10-15 mins. Grease the idli molds with oil.

* Step 2

Divide the dough into equal portions. Fill the idiyappam press with the dough and press the noodles onto the idli steamer. Add a little grated coconut if desired. Steam for 10-15 mins. Serve hot with vegetable stew or a coconut based curry.
