Honey sesame biscotti

This cookie/biscotti is a twist on the traditional Middle Eastern cookies known as barazek. It is similar to the Italian biscotti and Pakistani rusk cake. Barazek are loaded with sugar and ghee. However, this Honey Sesame Biscotti has the same flavour profile as the barazek. These sesame honey cookies are Irresistible. You just can’t stop at one. the honey makes the cookies so chewy and crunchy and keeps them soft for days. The sesame seeds lend a great nutty flavuor to balance out the extra sweetness. They taste especially good on the first or second day after baking. If you like the cookies to be extra crunchy, turn off the oven after the second baking and allow to cool in the oven.

2/3 cup

oil

anis seeds

1/3 cup

honey

Cooking instructions

* Step 1

Line a deep baking pan with parchment paper and set aside.

* Step 2

Preheat oven 350F.

* Step 3

Beat the eggs, anis extract and sugar in the stand mixer.

* Step 4

Add the oil, 3 teaspoon sesame, anis seeds and fennel seeds and beat for 1 minute.

* Step 5

Sift the flour and baking powder and add the bowl. Beat slowly for 2 minutes then on medium speed until incorporated. The dough with be sticky.

* Step 6

Wet your hands and transfer the dough to the prepared pan.

* Step 7

With a wet spatula or hands, spread the dough and level it.

* Step 8

Drizzle honey over the dough and gently spread it.

* Step 9

Sprinkle sesame seeds on top.

* Step 10

Bake for 30 minutes or until toothpick inserted in centre comes out clean.

* Step 11

Allow to cool complete before slicing with a serrated knife into desired size.

* Step 12

Heat oven to 320F.

* Step 13

Place the biscotti cut side down on baking sheet and bake for 5-10 minutes.

* Step 14

Turn the cookies over and bake for another 5 minutes.

* Step 15

Remove and cool completely on wire rack.

* Step 16

Serve with a cup of tea, coffee or glass of milk.
