Kashmiri Kesar Phirni/ Kang Phirani
Saffron and Kashmir have a very strong bond ! It's the birthplace of saffron. So adding saffron or Kang is a delicious way to add flavour to the dishes. This recipe of Phirni uses saffron and nuts to enhance the flavours and is a must have in celebration!

Cooking instructions
* Step 1
First, wash and soak the rice for 2 hours. Then drain and grind to a coarse paste.
* Step 2
Heat ghee and slow fry the nuts. Remove and keep aside. Add 1 tablespoon ghee and the rice to the pan. And slow fry it for 1 minute.
* Step 3
Now add the milk to the rice and stir well. Let it cook on slow flame till thick and creamy while stirring constantly. Then add saffron milk. Mix in sugar and keep cooking till mixture is thick.
* Step 4
Stir well. Cool till it reaches room temperature. Add cardamom and saffron to flavour.
* Step 5
Add half of the nuts, dates and mix. Garnish with saffron, nuts etc. Serve warm with Kashmiri #Vazwan (meal) enjoy!
