Egg and Cauliflower Korma

Cooking instructions
* Step 1
First, wash and blanch the florets in salted and boiling water for 5 minutes. Add a pinch of turmeric powder to the water too for colour. Then drain and keep covered till use.
* Step 2
Heat 1 tablespoon ghee in a kadhai. Add cumin, when it pops up, add all the whole spices one by one. Saute till aromatic.
Make a paste of ginger, garlic and chilli.
* Step 3
Then saute onion, ginger, garlic and chilli paste, and when it turns brown, add tomatoes and cook till soft. Then add tomato puree and cook for 2 minutes.
* Step 4
Cool this mixture and remove whole spices. Grind to a paste. Again heat 1 tablespoon ghee and pop cumin in it. Then add the cauliflower florets.
* Step 5
Saute them along with all the masala powders. Add some water and cook till soft. Then add the boiled and peeled eggs and saute well.
* Step 6
Now add the prepared paste, Coconut milk and mix well. Cook on very low flame for 2 to 3 minutes. Adjust the seasoning and consistency as per taste. Now the korma is ready.
* Step 7
Serve steaming hot with chapati, naan or paratha. Enjoy! It tastes too good! 👌👌
