This delicious sweet is a winter delicacy from the state of Gujarat. Made from protein rich ingredients like black gram lentils, cashews, almonds, pistachios, with mineral rich Jaggery and edible gum it is flavoured with spices like cardamom, cloves, mace, black pepper and dry ginger which gives it a distinct unmissable taste and aroma.
It gives the much needed warmth and energy to the body in winter. Try it out surely.

Cooking instructions
* Step 1
First dry roast the black gram lentils in a kadhai for 10 minutes on low flame. Then cool and grind it into a fine powder. Sieve and keep ready.
* Step 2
Heat 2 tablespoons ghee in a kadhali. Add the edible gum in batches and fry till it is puffed up. Keep it in a bowl till serving.
* Step 3
Now lightly fry all the dry nuts and grind them to a rough powder.
* Step 4
In a separate pan dry roast the spices and grind to a fine powder.
* Step 5
Heat remaining ghee and add the lentil flour.
Roast it on low flame till aromatic and golden brown.
* Step 6
Keep stirring and add Milk powder, spice powder, dry coconut and the dry nuts powder, reserving some for garnish.
* Step 7
Mix well for 5 minutes till well combined. Then add jaggery powder and 2 tablespoons extra ghee and mix well till jaggery melts and combines well.
* Step 8
Grease a square tray with ghee. Pour the mixture and press well all over keeping a 1" thickness. Sprinkle the remaining nut powder and press well. Mark with a knife into square or diamond pieces.
* Step 9
Now cool completely. Then remove the squares. Store in refrigerator in an airtight glass container till 2 weeks.
* Step 10
Delicious Adadiya is ready to enjoy !
