This Diwali, the emphasis is on light and easy snacks and sweets which can be made in less time and enjoyed as we all are busy in our work life balance. So here is an easy recipe of Chakli which requires no pre-preparation and still turns out crispy and long lasting too. Happy Deepawali to all the Cookpad family!

Cooking instructions
* Step 1
First, sieve all the flours. Then take a big and deep bowl and combine all the dry ingredients.
* Step 2
Add butter and rub well till a small ball forms when pressed in palms. Then slowly mix to form a tight a dough with warm water.
* Step 3
Keep covered for 10 minutes. Again knead with a small sprinkle of warm water to a soft dough.
* Step 4
Now heat oil in a wok to medium hot temperature and keep on same temperature.
* Step 5
Grease Chakli pressing mold with oil, attach star shaped disc at base and press a medium sized long shaped portion of dough in the mold. Close the press. Kepp 4 to 5 square pieces of plastic sheet ready to make chaklis.
* Step 6
Then make chaklis in a round shape by pressing and moving the mold in circular motions. (One on each piece of paper) Shape should be close spiral rings. Cut the end and press to next edge so that the Chakli does not open while frying.
* Step 7
Make 4 to 5 chaklis and slowly take one at a time on a perforated spoon and slide in hot oil very carefully.
* Step 8
Splash oil gently on the shapes with a perforated spoon. After 2 to 3 minutes, flip them over. Do not touch them earlier when they are still soft. Let them harden a bit before turning.
* Step 9
Fry on medium heat to golden brown on both sides. Drain at the side of wok and remove on a kitchen tissues lined plate. Keep open to let them turn crispy.
* Step 10
Let the oil temperature come to medium before frying next batch. Make all chaklis in similar way.
* Step 11
Enjoy hot with tea or serve spicy yoghurt, Chutney, pickles or butter! Store in an airtight box and enjoy for 2 to 3 weeks.
