Kulcha is an Indian fermented flat bread topped with herbs and seeds, which tastes very good with Creamy curries, Vegetable gravies and most importantly, Chhole. This bread is traditionally made with yeast, flour, butter and baked in tandoor. Here I am making an instant recipe which is made on tawa and topped with dhania and methi. Enjoy.

Cooking instructions
* Step 1
First, sieve all the dry ingredients in a bowl. Make a deep indentation or well in centre and add curd and melted butter.
* Step 2
Whisk the curd and butter well. Slowly start mixing the flour and butter in the liquid. Knead to a soft dough. Add water only if needed. Cover with a damp cloth and rest for 20 minutes.
* Step 3
Then heat a tawa or skillet on medium heat. Take a ball sized portion and roll it on oiled board. Flatten it in round shape. Sprinkle Sesame seeds, Nigella seeds, chopped coriander leaves and kasuri methi and press well. Then place on hot tawa. Sprinkle water on the sides and cover with lid.
* Step 4
Roast till base is golden. It will take around 1.5 minutes. Then flip over and sprinkle water on sides. Cook till the other side is golden at base. Repeat this process for rest of the dough.
* Step 5
When Kulchas are nicely roasted, take them on plate and brush with butter. Serve delicious Kulchas with chole, or your favourite curry and enjoy.
