Oranges are in season and marmalade is one of the best recipes to make if you want to enjoy them all through the year. I have made Orange Jaggery Marmalade by adding jaggery in place of sugar as it is healthier. I have recreated the recipe shared by fellow Cookpad author Kumkum Chatterjee with a little change. Thank you Kumkum ji for the delicious recipe . Sharing the cooksnap with three different serving bowls.

Cooking instructions
* Step 1
First, mix the orange juice, pulp, jaggery and the finely sliced orange peels in a thick based stainless steel pot.
(Do not use aluminium, copper or brass pans)
* Step 2
Mix and keep for 10 minutes so that the juices and jaggery are mixed properly. Then keep this on low flame and keep stirring to avoid burning.
* Step 3
Cook till the mixture is thick. Keep checking the thickness of syrup. When you put a drop on a chilled plate, the mixture should not be runny.
* Step 4
When the mixture hold place and thickens, add the gelatin and mix well. Add the sodium benzoate (optional) and stir well. Then remove from heat and cool a little.
* Step 5
Then fill in sterlized glass jar while it is still warm, close lid and store away from direct heat in a cool and dry place. Enjoy with bread, toast, cakes or muffins.
